Asian Avocado Filling Ingredients for Eggrolls

Fresh avocado mixed with jasmine rice, carrot, cabbage and Asian spices.

Servings: 30

Ingredients: 

  • 2 Cups Good Foods™ Avocado Pulp 
  • 4 Cups Jasmine Rice, Cooked 
  • 1 ½ Cups Carrot, Shredded  
  • 1 Cup Red Cabbage, Shredded 
  • 1 ½ Teaspoons Sesame Oil 
  • 3 Teaspoons Sambal 
  • 2 Teaspoons Sesame Seeds  
  • 30 Eggroll Wrappers 

Directions:

1. In a bowl mix jasmine rice, carrot, red cabbage and avocado pulp.  

2. Season mixture with sesame oil, sambal and sesame seeds, stir until fully combined.  

3. Place 3 tbsp in on a wonton wrapper, wrap into an eggroll shape and seal with water.  

4. In a fryer set to 350F, fry samosas until golden brown and crispy. 

Southwest Avocado Filling Ingredients for Eggrolls or Samosas / Empanadas

Fresh avocado mixed with jasmine rice, carrot, cabbage and Southwest spices.

Servings: 25

Ingredients: 

  • 2 Cups Good Foods™ Avocado Pulp 
  • 4 Cups Jasmine Rice, Cooked 
  • 1 ½ Cups Carrot, Shredded  
  • 1 Cup Red Cabbage, Shredded 
  • 1 1/1 Teaspoons Cumin, Ground 
  • 6 Teaspoons Ancho Chili, Powdered 
  • 3 Teaspoons Kosher Salt 
  • 25 Eggroll Wrappers 

Directions:

1. In a medium saucepot over medium-high heat, combine mushrooms, peppercorns, and plant-based butter, and mix well to combine. 

2. Cook, stirring frequently, until mushrooms are caramelized and peppercorns are toasted, about 4-6 minutes. 

3. Add flour and stir to incorporate. Continue to cook for 3-5 minutes, until flour is toasted and begins to smell nutty. 

4. Add oat milk and stir to combine. Bring to a boil then reduce heat and simmer for 5-7 minutes, until sauce has thickened to desired consistency. 

Indian Avocado Filling for Samosas

Ingredients: 

  • 2 Cups Good Foods™ Avocado Pulp 
  • 4 Cups Jasmine Rice, Cooked 
  • 1 ½ Cups Carrot, Shredded  
  • 1 Cup Red Cabbage, Shredded 
  • 2 Tablespoons Garam Masala 
  • 4 Teaspoons Kosher Salt 
  • 60 Samosa Wrappers 

Directions:

1. In a bowl mix jasmine rice, carrot, red cabbage and avocado pulp.  

2. Season mixture with garam marsala and salt.  

3. Place approximately 1.25 Tbsp at the top of a wrapper and fold onto itself into a samosa shape.  

4. In a fryer set to 350F, fry samosas until golden brown and crispy.
