Spinach Artichoke Monte Cristo
Ingredients:
- 4 slices of thick-cut white or brioche bread
- 8 slices deli ham
- 4 slices Swiss or Gruyère cheese
- ½ cup store-bought spinach artichoke dip
- 2 large eggs
- ¼ cup milk
- Salt and pepper to taste
- 1 tbsp butter (for grilling)
- Powdered sugar, for garnish (optional)
Directions:
- Spread about 2 tablespoons of spinach artichoke dip on one side of each bread slice.
- Layer each sandwich with 1 slice of Swiss or Gruyère cheese, and 4 slices of ham.
- Top with another slice of cheese, then place the second slice of bread on top, spinach artichoke dip side down.
- In a shallow dish, whisk together the eggs, milk, and a pinch of salt and pepper
- Carefully dip each sandwich into the egg mixture, making sure both sides are evenly coated
- Heat butter in a large skillet or griddle over medium heat.
- Place the sandwiches on the skillet and cook for about 3-4 minutes on each side, until the bread is golden brown, and the cheese is melted.
- Dust the sandwiches with a light sprinkle of powdered sugar.
