Potato Tart with Caramelized Onions and Tzatziki

Savory potato tart made with fresh herbs for balanced flavor.

Prep Time: 20 minutes


  • 4 sheets of vegan puff pastry dough  
  • 3 Tbsp of olive oil  
  • 8 medium size yellow potatoes, peeled and sliced thinly through mandolin slicer  
  • 2 large red onions 
  • 8oz Good Foods Dairy-Free Tzatziki Style Dip  
  • Fresh rosemary 
  • 2 tsp black pepper  
  • 2 tsp kosher salt  
  • Optional: 6 brussels sprouts shaved thinly  


  1. Preheat oven at 400 F  
  2. Heat one tablespoon of oil and sauté sliced onions until they are caramelized, about 8-10 min stirring them constantly. Set aside.   
  3. Place the sliced potatoes in a bowl and drizzle with 2 tablespoons of olive oil; coat the potatoes with oil.  
  4. Meanwhile, unfold the sheets of puff pastry on a full sheet pan lined with a parchment paper.   
  5. Take 8oz of Good Foods Tzatziki and spread it in the center of the puff pastry leaving 1/2 inches off the edges. 
  6. Layer with caramelized onions, sliced potatoes and shredded Brussels sprouts. Sprinkle the tart with some fresh rosemary, salt, and pepper. 
  7. Take the fork and press the edges of the puff pastry to create pretty design.  Brush the edges of the puff pastry with almond milk. 
  8. Bake the tart for 20 min until edges are golden. Drizzle it with some more Good Foods Tzatziki. Enjoy!
